Sweet Potato Veggie Wrap


Seasoned sweet potato rounds, black beans, and avocado, make these flavorful Veggie Wraps (or salads) a satisfying vegetarian lunch.


Sweet Potato Avocado Oil Chili Powder Cumin

Preheat the oven to 425°F. If using a toaster oven, select the BAKE setting and adjust the cooking rack to the lowest placement.

To air fry, preheat the air fryer at 375°F for 5 minutes.

Peel the sweet potato and slice into 1/4-inch rounds. Toss with oil, chili powder, cumin, paprika, garlic powder, and salt.

Air fry or roast until fork-tender.

Time to get saucy! While the sweet potato slices cook, mix together the salsa, yogurt, and lime juice.
