Ultimate Hummus Sandwich

Our Ultimate Hummus Sandwich is a real lunchtime winner with layers of sweet roasted red peppers, carrots, avocado, and creamy hummus. Easy to customize, it’s perfect for cleaning out the fridge and using up whatever fresh veggies you have!

Hummus Sandwich Ingredients

  • Bread: I like to make this sandwich on a hearty whole-grain mini-baguette. But these ingredients taste great on ciabatta, sub rolls, sliced bread, or even bagels! Wraps or pitas work well too.
  • Hummus: Plain or garlic is my go-to but use whatever flavor you like.
  • Avocado: About half a small one, seeded and mashed.
  • Veggies: We added roasted red pepper, carrot, cucumber slices, and some leafy greens.
  • Sriracha Sauce: For a fun spicy kick.

How To Make This Yummy Vegetarian Sandwich

Step 1: Toast The Bread. Slice the baguette in half and scoop out a little from the center (to hold the hummus). Spray both sides with oil and toast.

Step 2: Mash The Avocado. Then mix it with a little lemon juice, salt, pepper, and red pepper flakes.

Step 3: Assemble Your Sandwich. Spread the hummus on one side of the bread. Add a quick drizzle of sriracha sauce (or your favorite hot sauce) and then pile on all the veggies. Spread the mashed avocado on the other half, top the sandwich, and enjoy!

Don’t Be Afraid To Get Creative

This basic recipe is easy to modify so you can use what you like and what you’ve got on hand. Try swapping the red pepper for some juicy tomato slices, and toss on a few bites of red onion, sliced radish, or pickles.

Cheese is fun too – a slice of Havarti or Provolone would go great with the hummus. We always keep some on hand for making toaster oven grilled cheese sandwiches.

Sometimes I’ll even add a swipe of pesto or tapenade. When it comes to veggie sandwich fix-ins the sky’s the limit!

Veggies and Hummus Sandwich

This easy hummus sandwich recipe is endlessly customizable. Swap in your favorite veggies for a tasty vegetarian meal anytime! 

Ingredients

Avocado Mash:

  • Half a Small Avocado
  • 1 Lemon Wedge
  • Pinch of Salt, Black Pepper, and Red Pepper Flakes

Sandwich:

  • 1 5-ounce Whole Wheat Mini Baguette (or other bread of choice)
  • 1/2 teaspoon Olive Oil or Oil Spray
  • 1/4 cup Hummus (Plain, Garlic, or whatever you’ve got on hand)
  • 1 teaspoon Sriracha Sauce, optional
  • Handful of Leafy Greens - sliced kale, spinach, arugula, etc.
  • 1 Carrot, peeled and chopped into matchsticks or shredded
  • 1 Roasted Red Pepper, store-bought or homemade
  • Half a Small Cucumber, thinly sliced

Instructions

  1. Slice the baguette in half lengthwise. Use your fingers to gently scoop some of the bread from the bottom half. Spray or drizzle both sides with olive oil and toast the bread until lightly crisped. Set aside to cool for a few minutes.
  2. While the bread toasts, scoop the avocado into a small bowl and mash with the back of a fork. Squeeze the lemon wedge over it, add a pinch of salt, pepper, and red pepper flakes, and stir to combine.
  3. When ready to assemble, spread the hummus across the bottom half of the bread (in the area you scooped out) and add a squeeze of sriracha sauce. Layer on the carrots, kale, red peppers, and cucumbers.
  4. Spread the avocado onto the other slice of bread, and place it on top of the sandwich. Slice the baguette in half and dig in!

  1. This looks delicious! I love crunchy veg and hummus in a sandwich 🙂 My first job was working with food too – I worked Sunday lunchtimes in a restaurant prepping their desserts!

  2. This looks delicious! Is it suitable to be packed as a portable on the go lunch? I’m desperate to find inspiration for when I’m out and about during the day and don’t want to have to a) spend money on take away and b) be extremely limited as to what I can even take away! lol

    1. Thanks Anna 🙂 I hear you, I hate buying lunch if I can bring it.

      I think the avocado and veggies would be fine but the hummus might make things a little soggy. If I was packing it to eat on the go I would put the kale and carrots in the bottom first to act as a barrier between the hummus and bread. Or I might leave the hummus on the side to add right before eating if it would work for the situation.
